    With the success of over 7,000 copies sold of the first two editions. Local publisher

    Remy Tancred and photographer Nelly le Comte have jointly produced a refreshed

    third edition that  released in March 2017 Byron Bay – A taste of the region is a

    206 page, stunning collection of recipes and photographs from the regions finest

    producers, caterers, restaurants and cafes. Featured chefs include Ben Devlin –

    Paper Daisy, Steven Snow – Fins, Katrina Kanetani – Town and Bret Cameron –

    Harvest, just to name a few!

    Tuesday's are always busy, the week is in full swing, the kids have their surf lessons and I am quickly dipping into the ocean as I am waiting for them to finish surfing. Life in Byron is good. Prawns and salmon for lunch and tonight is running night on the track with the Byron Bay Runners.

    Nothing beats getting up early and make it to the farmers markets in Byron Bay. And tomorrow morning between 7.30 and 10.30 both Remy and Nelly will be there promoting the beautiful food this region has to offer.

    Not only will two of this area's great chefs (Gavin Hughes from the Byron at Byron and Joseph Griffin from Harvest) be preparing and sharing their recipe featured in The Byron Bay Cookbook, the book, which is selling at a high rate will be available at a special market price. So come and try the fabulous food, interact with two amazing chefs, speak to the girls behind this project and visit us at the market.

    Flicking through the my lovely Byron bay cook book , searching for something delicious but still simple to prepare, my eye catches this easy light pasta dish that with a great glass of Pinot Gris will be perfect for lunch with my friends today. A quick dash on my bike, Byron is so easy to navigate through, a few chillies and extra's from the Green garage and off I go into the kitchen and whipping this up in no time.

    The Byron Bay Cook book is rapidly selling and we are finding more and more fabulous stores that sell our wonderful book. This week I was so pleased to meet the wonderful Clare and Tony at Waxjambu emporium. If you are looking for a hard cover book, this is the place to go. You will find the most amazing Christmas decorations and gifts too!

    And Bangalow's Heartbeat magazine featured an article of Food and photography, highlighting the Byron Bay region, the food, some amazing photography and the cook book.

    We are so lucky to have featured not just one but two award winning chefs/producers in our book! Which is selling pretty fast! The funniest one is a great cafe in Mullumbimby (facebook.com/rockandrollcafemullumbimby) who upon ordering 4 books, called me within the hour to please please have 10 more as they had already sold the previous 4. Have a coffee there and buy the book, the guys are amazing. And whilst you are there try there Womlette, simply Devine!

    Massive congratulions to Peter Nicholsons for his award winning beetroot vinegar!

     

    here is a recipe from the book for a surprisingly easy entertainer:

    Avocado with parmesan and cashew crust.

    with nicholson's fine food beetroot finishing vinegar

     

    Select a large avocado and cut in half. Carefully peel away the outer skin, leaving the inside intact.

    chop cashew nuts finely and mix with freshly grated parmesan. Sprinkle the nut/cheese mix on a plate and press the cut side of the avocado firmly into the mix.

    Turn over to check the surface is covered evenly and if not, repeat the process. With the avocado cut-side down, use a knife to slice a small flat surface at the top of the rounded side. This will help the avocado to sit nicely on a plate.

    Gently turn the avocado over and position on a serving plate. Toss the rocket leaves in 10ml of beetroot vinegar then pile into the hollow of the avocado. Sprinkle with the Lightly spiced beetroot Seasoning sprinkle to finish of the dish.

     

    Serve with a cool crisp glass of white wine!
